i’ve been staying in a lot lately, cooking at home, reading, hanging with Justin and generally just laying low. between planning the wedding and recovering from the wedding things have been pretty chill at our house. which i love, but it’s also fun to mix it up, and i felt like it was time for a night out on the town! since i haven’t been to the magic castle (a classic LA spot!!) in many years (and justin has never been!), i really wanted to surprise justin and his cousin blake with a magical evening there! it’s one of those secret club type places where a magician has to invite you, you enter through a bookcase, you dress fancy and have cocktails, there are no photos allowed inside, and you sort of feel transported in time when you arrive. there are little magic shows in small cave-like rooms, card tricks happening at the bars, and an overall fun, kitchy feeling.

so, we made a whole night of it, drank martinis at home while we got dressed up, requested an  trip (which made it feel like a celebration from the second we left!), and had such a wonderful time with close friends and family!

you really do feel relaxed in an , so there are a few occasions i like to splurge on one. they are great for meetings across town when i need to work during traffic. they’ve added some new premium features, like the ability to request a “Silent Ride” so you reduce distractions while you are on your way. i like to take them on early morning trips to the airport so i can feel relaxed and calm before a long flight  or job (they are usually stocked with water and snacks, chargers, and music controls). you can also request Temperature Preference from your phone and also request Luggage Support before your driver even arrives which is great for people like me who are anxious travelers and like to be in control.

after a few drinks, a ton of magic, and a lot of laughter, we made it home safe thanks to . and sang ain’t no mountain high enough while possibly driving the driver nuts. although, i think i caught him signing along, so maybe he loved it. thanks for always getting us out of the house and on town town, Uber!

it takes quite a while to finish the spaces in your home. it’s too expensive and time consuming for me to do the whole thing at once. so we’ve been slowly taking it room by room. since we’ve been staying home a lot more, we really wanted to start utilizing our front yard! it’s so lush and pretty out there, but we never really put the effort in to designing that little patio. we just threw extra chairs out there and let it get dirty and then never sat there (bummer). we went with all (been a huge fan of them for a long time now) they have such stylish and reasonably priced , i was really impressed!

now we enjoy our cappuccinos out there in the morning, i like to meditate/read and take in the views, and dinner outside is always awesome here in LA. i want to get some more candles and string lights out there (and maybe a fire pit), but this refresh is amazing and got us spending way more time outside.

my aunt gifted me the last year and it has quickly become one of my favorites. it’s really geared towards the home cook, people like me who want to make delicious meals but don’t want anything too fussy or over the top. you can tell that she really tested and refined all of the recipes and everything i’ve made has been excellent including this eggplant dish we’re sharing today. i highly recommend the cookbook. i’m pretty picky when it comes to which cookbooks i keep around, they really have to stand the test and deserve their space on my shelf and this one has passed with flying colors. – joanie

eggplant parm | designlovefest

jessica calls it “new eggplant parm”. she has simplified the whole process and kept it to the basics, fried eggplant, cheese, sauce and that’s it. it’s simple and delicious!

what you’ll need: 
• 2 1/2 pounds eggplant
• salt + pepper
• 1/2 cup AP flour
• 2 eggs beaten
• 2 cups panko bread crumbs
• 3/4 cup grated parmigiano reggiano
• canola oil for frying

for the sauce: 

• 2 tablespoons extra virgin olive oil
• 1 cup finely chopped yellow onion
• 2 cloves garlic, peeled and thinly sliced
• 2 pints cherry tomatoes
• 1 tablespoon chopped fresh oregano

to top:
• 1/2 lbs fresh mozz:rella
• flaky salt
• torn basil leafs

• cut eggplant into 1/2″ thick slices and season both sides with salt and pepper. put the flour, beaten eggs, and bread crumbs mixed with the grated cheese into 3 different containers. she recommends cake pans which work great if you have them.

• dip each piece of eggplant first in the flour, then in the egg and finally in the panko mixture pressing down lightly so the breading mixture sticks. place each piece on a baking sheet until you’ve coated all your eggplant.

• heat 1/2 each oil in a large frying pan over medium heat. set a wire rack over a baking sheet. when the oil is hot (you can test the oil by touch a piece of the eggplant to the oil with tongs and seeing if it sizzles) add the eggplant in a single layer. cooking until golden brown on each side, it took us about 5 minute per side but go by the color, not the time! once cooked place on the wire rack to cool. i lightly salted them while they were still warm but that’s optional, i’m just totally addicted to salt 🙂

• for the sauce, in a medium pan over medium heat, heat the olive oil, then add the onion and cook, stirring until translucent, about 6 minutes. add the garlic and cook for 1 more minute, then add the cherry tomatoes and cook until they begin to soften and pop, about 5 minutes. reduce the heat to low, add oregano and cook until the sauce thickens slightly, 5 minutes or more. season to taste with salt. Remove from the heat and transfer to a serving bowl.

• final step! preheat the broiler to high. transfer the eggplant slices to an oven safe platter or baking sheet. top each slice with mozzarella and broil until melted. Remove from the oven, sprinkles with flaky salt, garnish with torn basil and serve immediately with the sauce alongside or on top!
