one of the most important elements in a kitchen is your knives. they are probably the most used item and there are few things more frustrating with cooking than trying to cut things with a dull knife. both joanie and i use in our home, justin introduced me to them when we started cooking together and joanie registered for them for her wedding. so when asked if we wanted to team up with them and offer a Wüsthof Crafter knife giveaway we were a 1000% yes! they just redesigned the knives and they now have a smoked oak handle with brass rivets which are gorgeous. i’m so excited to be able to give this set away. they are truly knives that with proper care will last a lifetime (psss… it’s more than $1,000+ worth of knives!)

we had lunch at the beverly hills hotel last week and tried their chopped cobb salad which was delicious. we decided to re-make it because what better way to break in new beautifully shape knives than with tons of chopping! this recipe is time intensive in the sense that we wanted everything to be in perfect cubes but it turned out perfectly and we’d highly recommend giving it a go.

Beverly Hills Hotel Chopped Cobb Salad

serves: 2-3 as an entree or 3-4 as a side 

what you’ll need: 
• 1/2 cup extra-virgin olive oil
• 3 Tbsp balsamic vinegar
• 1 Tbsp Dijon mustard
• 1 garlic glove
• 12 oz iceberg lettuce, finely chopped
• 12 oz hearts of romaine, finely chopped
• 2 oz watercress, finely chopped
• 1/2 lb red beets, roasted and finely diced
• 1/2 lb aged cheddar cheese, finely diced
• 1/2 lb applewood-smoked bacon, cooked and finely chopped
• 3 hard boiled eggs, peeled and finely chopped
•  1/2 lb cooked chicken breasts, diced
• 1 large tomato, peeled and diced
• 1 avocado, peeled and sliced

• we started by prepping all the ingredients that need to be cooked, you can prep each thing how you prefer but this is what we did: with the eggs, put them in a pan with water over medium high heat, when it starts to boil, remove from the heat and let them sit covered for 10 minutes, put in ice waterfor the beets, wash and pat dry, place on tin foil with a little oil and salt and bake at 450 degrees for 45minutes- 1 hour. once cool, peel the skin off with your hands and set aside. we seasoned the chicken with olive oil, salt and pepper and cooked it at 375 for about 20 minutes. and the bacon we cooked until it was reallllly crispy so that it would add a nice crunch to the salad.

then mix your dressing, add the oil, balsamic, mustard, and garlic (we used ) together in a bowl and whisk until smooth, season with about 1 teaspoon salt and some pepper. once you have everything prepped, it’s time to start chopping! chop the beets, cheese, chicken, and tomatoes into as cubes as much as possible. for the lettuce and egg, just chop really finely.

    My absolute FAVORITE summer recipe would have to be chips and guac. This recipe is vegan and gluten free. It is so quick and easy… perfect for a meal, or a party snack.

    c h i p s .
    6 medium potatoes
    1 tbsp garlic powder
    2 tsp onion powder
    1 tsp cumin
    1 tsp paprika
    1/2 tsp chili powder
    salt + pepper
    (The exact measurements are not needed, and I will sometimes add whatever other spices I think will taste good)
    olive oil

    1 ripe delicious avocado
    2 tbsp lemon juice
    1 tsp chili
    1 tbsp coriander
    3 tbsp diced red onion
    1 diced tomato

    1. preheat oven to 220 degrees Celsius
    2. chop the potatoes into chip sized pieces (approximately 1x8cm)
    3. add these to a bowl with the oil and spices and mix until everything is combined
    4. bake the chips for 40-60 minutes depending on desired crispiness (I would check every 10 minutes after 40 minutes).
    5. while the chips are cooking add all of the guacamole ingredients into a bowl and mash and stir until combined.
    6. enjoyyyyyy (and yes I have consumed all 6 potatoes in one sitting and I am proud)

    Sweet potato tacos have been a go-to for me this summer. So simple to roast with chili powder, cumin, garlic salt, etc., and they don’t need tons of toppings to punch up the flavor. Pickled onions (also so easy!) on top make it feel so special.

    We just had dinner with one of our amazing neighbor families and had what Cara calls “Summer Sammies.” Basically they were veggie burgers topped with any veggies that need to be eaten before they go bad. I had mine on oat bread with a shmear of mayo. It was super simple, light and delish! This will be a new fave in our family as well!

    I’m loving BBQ chicken thighs (marinated in a pineapple bbq spice and simmered on a BBQ in a tray until cooked through, then finished on the grill) and red peppers, yellow peppers, red onion, zucchini marinated in salt, pepper and olive oil, bbq’d in a tray! Top it with feta. Voila!

    Anything with pineapple! See a version of my favorite chicken and pineapple recipe below!

    2 large chicken breasts
    1 cup pineapple (crushed)
    1/2 cup chili verde sauce

    Place the chicken breasts in a slow cooker.
    Pour 1/2 cup crushed pineapple and 1/4 cup chili verde sauce over each chicken breast.

    Cook on low for 4-6 hours and/or until the chicken easily falls apart when poked at with a fork.

    Serve over pasta, a salad, or rice!

    This is one of my fav summer appetizers to bring to a party! So easy and SO delish! Just finishing up a full kitchen remodel and would LOVE new knives so I can get to cookin’ again!

    Greek Layer Dip
    1, 1o-ounce container of hummus, your favorite flavor (I used roasted garlic)
    1/2 cup plain non-fat Greek yogurt
    1 tomato, diced
    1/2 cup diced, seeded cucumber
    1/3 cup crumbled feta cheese
    1/4 cup pitted Kalamata olives, chopped
    2 tablespoons finely chopped fresh parsley
    Pita chips, carrots, broccoli, sliced bell peppers, or crackers, for serving

    Spread the hummus in a smooth layer in the bottom of an 8×8-inch square baking dish, a shallow pie dish, or similar serving dish. Dollop the Greek yogurt by small spoonfuls over the top, then gently spread to create a new layer.

    Scatter the tomato, cucumber, feta, and olives over the top. Sprinkle with fresh parsley. Refrigerate until ready to serve, then dip with pita chips, crackers, and sliced veggies as desired.

    My favorite summer recipe is one I got from Martha Stewart years ago. It’s just fresh chopped tomatoes from my garden, lemon zest, a little red pepper flakes, garlic gently cooked in olive oil, a few capers, salt, and pepper, and fresh basil. Then let sit for half hour and serve over pasta. I’m going to try your salad tonight though!

    on a hot summer, I love to treat my love and myself with a gazpacho soup! I love it little sweet and little spicy: few drops of tabasco and a small melon (or a mango) makes a big difference. I would suggest finely chopping a small amount of each vegetable/fruit in the gazpacho for garnish. And dont forget few icecubes right before serving! Beteavon!
